Anasazi Beans received its name from an ancient cliff-dwelling civilization that lived in New Mexico, Colorado, and Utah. Legend has it that the bean was found by an anthropologist in one of the ancient Anasazi ruins in the 1900s, thus the name Anasazi Bean. The color of the bean is a beautiful burgundy with pale cream spots, but unfortunately the bean loses its color when cooked.
