For centuries, Chamomile when brewed into a tea, has been used as a calming agent by not only the ancient Egyptians but also the Native Americans and the Mayans.  The slightly bittersweet flavor with notes of apple are prefect not only for a calming tea but also is great for desserts like Macarons.
