Black Peppercorns are Green Peppercorns that have been cooked and dried, and are the most commonly used peppercorn. Black Peppercorns were once used as currency, and today is the most widely traded spice in the world.
Green Peppercorns come from the piper nigrium flowering vine plant and are picked while they are unique. Green Peppercorns have a fruity flavor and are much milder than Black Peppercorns, but still pack a punch.
Pink Peppercorns are the ripe berries of the Brazilian pepper tree shinus terebinthifolius. Pink Peppercorns are mild, sweet, and quite pungent, however are not very peppery, so they are commonly used for their attractive appearance in dishes.
White Peppercorns are picked when they are partially ripe. Then, they are soaked in water until the skin softens and is removed. Although this peppercorn is very similar to the Black Peppercorn, the taste and flavor is less pungent.
