Lobsters of the South are Back!

Spring, the promise of good things to come, is celebrated in Texas with bluebonnets and rodeos. When it comes to food, nothing is better in the springtime than a bountiful Texas crawfish boil. It’s time to get out the boiling pots and enjoy the delectable crustaceans with friends and family. Don’t forget to add your secret ingredients: Southern Style Spices Traditional and Spicy Shrimp & Crab Boil blends!

Spice Talk Tip:

Test and retest the crawfish by stirring the pot to release the heat. After they turn bright red pull one out to test. If the texture is rubbery, the tail meat is not done. If it is falling apart, it is overcooked. If the meat is firm it is perfectly done!

Instructions:

  1. Fill a 40 quart boiler pot about 1/3 with water and bring to a boil.
  2. Add seasonings, stir well and bring back to a rolling boil.
  3. Add the corn, potatoes, sausage, garlic, onion, and lemon. Coverand simmer for 20 minutes.
  4. Taste the crawfish boil water and add more Spicy Shrimp and Crab Boil blend and salt to taste.
  5. Transfer the crawfish into the pot and simmer until the shells turn bright red (around 5 minutes See TIP below).
  6. Test for doneness by peeling a crawfish. Be sure not to overcook, or crawfish will become tough.
  7. Remove all the ingredients using a strainer and serve Louisiana-style, spread over a picnic table covered with newspapers.
